You should see a "Default Mail App" setting in the next menu. Tap that and then select which app you want to be your default email app.
And voila! You've done it. Whenever you do anything pertaining to email on your iPhone, it'll automatically get directed to that app instead of the default Mail app. It's a shame iPhones had to be around for more than a decade before users could do this, but hey, better late than never.
